When it comes to grains there are two extremes. There’s the mainstream that says grains are the bottom of the food pyramid and they should be the majority of what you eat. On the other side there’s the carnivores who say you should never eat grains.
Like most things in life, we believe the sweet spot is somewhere in the middle.
Grains do have properties that affect us negatively. Gluten triggers the immune system, causing inflammation and leaky gut which leads to bigger problems. Phytic acid prevents the absorption of nutrients, again which leads to bigger health problems.
When properly fermented, wild yeast and bacteria break down most of these two properties in grains so you don’t have to deal with them. Most, but not all.
Here’s our philosophy: if you are not feeling your best or if you have a particular health issue you are trying to fix (headaches, rash, diabetes, arthritis, chronic fatigue, etc.) then you should avoid grains (including gluten-free grain products as they have their own issues also) altogether while you focus on healing your gut and body.
But if you are happy, healthy and thriving, then you should be able to enjoy some properly fermented real sourdough in your diet. The key is to be your own researcher and subject. Continuously monitor yourself to see how you feel after eating anything you eat, come to your own conclusions about what your ideal diet should be.
So if you feel great with sourdough and fermented grains in your life, perfect, you are the reason we exist – so that people like you who want to eat bread and pasta and pastries can have the cleanest, most digestible, least harmful versions possible.
